Walnut Pasta Salad with Bell Pepper Dressing

Summer dinners are kind of imperfect without pasta salads; but it’s utmost important that salads should be healthy not smothered in heavy dressings. Many people love creamy dressing and it’s not necessary that you should use mayonnaise, creams or cheese for making dressings. Fruits and veggies based dressings can be healthy, rich and creamy too. So I made this bell pepper dressing with roasted peppers, olive oil , vinegar and herbs; it’s light, thick and creamy plus full of flavor. This dressing suits quite well to walnut pasta salad. If you want to make this salad a complete meal then just add some protein chicken/ tofu/ beans.

  • 2-3 bell peppers ( red, orange or yellow).
  • 1 tbsp +1 tsp extra virgin olive oil.
  • ¼ tsp oregano.
  • ¼ tsp black pepper(grounded).
  • 1 cup pasta (bow tie).
  • ½ tsp salt.
  • 2 tbsp balsamic vinegar.
  • ½ tsp honey.
  • 1 tbsp Dijon mustard
  • 1 tsp Italian herb mix.
  • 1 small avocado ( cubed).
  • ½ cup cherry tomato (sliced).
  • 1 cup field greens / salad mix.
  • ¼ cup walnuts (chopped).
  1. Preheat your oven to 425º F; line a baking tray with aluminium foil.
  2. Place peppers cut side up on baking tray drizzle with 1 tsp olive oil, sprinkle with oregano, salt and pepper.
  3. Roast until flesh is tender and skin is blistered in spots for about 25-30 mins.
  4. Remove peppers from oven and place in a bowl and cover with a lid for 5 mins..
  5. Remove the skin of peppers, chop roughly and add to blender.
  6. Add 3 tsp olive oil, vinegar, honey and herb mix to the blender,blend until smooth and creamy.
  7. In the mean time cook pasta as per package directions. Drain and run under cold water; transfer to a bowl.
  8. Take a large bowl mix salad greens, avocado, cherry tomato and add pasta.
  9. Pour bell pepper dressing on salad and sprinkle with walnuts.
