Vegan Stuffed Peppers

Peppers are one of  my favorite pizza topping and I love yellow, orange and red bell peppers over traditional green ones. It’s one of the vegetable apart from mushrooms; which I usually buy at every visit to the grocery store. I like them because they are also very versatile; I can use them to add color as well as texture to my dishes. Stuffed peppers is a very popular dish and can be made in many ways from Mediterranean to southern with the long list of ingredients.

I remember the way my mom used to make potato stuffed green peppers; today I made them in similar way but with the addition of my favorite ingredients. I have used red and green bell pepper but you can use any ; whatever is on hand. You can definitely add cheese on the top and in stuffing if you are looking for vegetarian option.

Stuffed Bell Peppers

Vegan Stuffed Peppers.
  • 2 medium size potato boiled and mashed.
  • ½ cup red onion chopped.
  • 5 mushrooms chopped.
  • ¾ cup frozen corn.
  • 1 clove garlic minced.
  • ½ tsp lemon pepper seasoning.
  • 1 tsp cumin powder.
  • ½ tsp paprika.
  • 2 bell peppers halved, seeded.
  • 1 tbsp oil.
  • 1 tsp Italian seasoning.
  • salt to taste.
  1. Preheat oven to 350º F. Lightly grease a baking pan and keep aside.
  2. Heat oil in a large pan and add onions to it; cook till they get translucent.
  3. Add garlic cook for 10 seconds and then add mushrooms and corns; cook until vegetables are softened.
  4. Season with salt, spices and seasonings and then add potatoes to the pan; mix thoroughly.
  5. Lightly sprinkle inside of peppers with salt and fill them with the stuffing mix.
  6. Transfer peppers to the baking pan and cover the pan with aluminium foil.
  7. Bake for 40 mins or until the peppers are just tender.
  8. Serve hot.
