After one grain free day all I was looking forward to eat something sweet but healthy. So I baked these yummy banana carob chips muffins, with overripe bananas, carob chips and spelt flour. I have a whole bag of ripe and overripe bananas which I got from Co-op for just 2 bucks. So, it’s best time to bake muffins overloaded with goodness of banana.
I want to make banana walnut muffins but my little one cannot have walnuts as he just got only 3 teeth yet. So second option was chocolate chips/ carob chips and I have used carob chips this time. Carob chips are a bit sweeter in comparison to chocolate chips but they are good in terms of taste. The good thing is that carob chips are also caffeine free. I have used just one tbsp of brown sugar in the whole recipe as bananas were overripe so they were naturally very sweet. I have used olive oil in my muffin recipe but you can use vegan butter or coconut oil too. But make sure to melt them at room temperature before adding into the batter.
I love using spelt flour for baking it has also less gluten in comparison to wheat flour; but you can use any flour of your choice or even combination of flour too. These banana carob chips muffins came out so perfect light, fluffy, soft ; as I was expecting with a sweet addition of carob chips. You can also subsitute carob chips with vegan chocolate chips if you want to.
