You might be surprised by such a long title, but I can’t remove any of these key ingredients of this healthier prune plum cake recipe. These ingredients can not be substituted for such a delicious, fruity, light plum cake.
You might be aware of the fact that I love using olive oil for my dessert and breakfast recipe, why shouldn’t I? Olive oil is a healthier alternative to butter and if you don’t have olive oil; then you can use any other tasteless oils like safflower or peanut.
But if you haven’t tried baking with olive oil then give it a try, at least once.
The second best oil option for baking is coconut oil , it gives distinctive aroma and taste to the baked goods. Even after that, you are skeptical about using any sort of oil for baking then stick to the butter or closest substitute margarine.
I bake often, but rarely with butter and refined sugar. But you need to experiment a bit when you substitute traditionally used ingredients for healthier alternatives. Especially in the case of baking, it is very important to know your ingredients; and to use your ingredients wisely as baking is basically a science. Even though I was a science student it doesn’t help me a much.
I stay away from white sugar as much as possible; now I consume only 5% of the white sugar that I used to consume earlier. So I have used brown sugar and a little honey for this healthier plum cake recipe. I know brown sugar is the mixture of molasses and white sugar but it is great for baking. I want to serve this cake for weekend dessert and leftover for Sunday breakfast, so really want to make it light and fruity.
All purpose flour was not an option for my cake; as I usually combine all-purpose flour with other whole grains if it’s hard to avoid it. So I have used 100% organic spelt flour for my prune plum cake recipe. This ancient grain is good for baking. Although It is not recommended for baking structured baked goods like cakes and bread.
Although I just started with these ingredients for testing, as I was baking a cake with spelt flour for the first time. This recipe turned out superb” The first time”. When I tasted it, the first word that came out of my mouth was ” YUM”. This plum cake can not be better than that. I could not have wished for better results with a whole grain fruit cake. This cake is fluffy, light and moist from olive oil and creamy greek yogurt. Super tasty and good looking with all the glorious flavors. You can taste these flavors in every bite of this cake.

I added cinnamon to flavor this cake but you can use any of your favorite spices from nutmeg to cardamom. Also, any stone fruit (peaches, nectarines, yellow plums) can work great for this recipe. This prune plum cake is one of the best options if you want to eat dessert for breakfast.
