Roasted Cauliflower Chipotle Vegan Tacos

Merry Christmas !! everybody and sorry for not posting in a long time. Today I am posting one of the easiest recipes which are quick, plant-based and healthy. I hope you will enjoy this one of the most delicious flavorful tacos. Also, you can easily adjust the flavours depending on your taste buds.

I recently bought these two large heads of cauliflower as my husband really like it.  But even after attempting 3 different regular cauliflower dishes I want to try something different without compromising taste and flavour. So, I decided to make roasted cauliflower tacos. These can be a perfect weeknight meal option as this is a really quick recipe. The best part of this recipe is that you can do the preparation in advance and can serve them in 10 mins or so. Also, I have used my homemade multigrain soft tacos ( whole wheat, chickpea flour and millet flour) but I recommend serving them with the tacos shells of your choice. I have served this recipe with my tri-colour salad but you can use micro-greens, lettuce or any leafy salad for that extra crunch.Cauliflower Tacos Chipotle

  • 1 small head cauliflower (washed and chopped in to bite size pieces).
  • 1 tbsp canola oil
  • 1 tsp cumin powder
  • 1 tsp BBQ seasoning
  • 1/2 tsp salt
  • 1 tsp coriander powder
  • 2 tbsp tomato sauce
  • 1 tbsp chipotle sauce
  • 1 tsp dijon mustard
  • 1/2 tsp vinegar
  • 1/2 tsp maple syrup
  • 8-10 tortillas
  • Fresh Cilantro
  • 1/2 cup tri-color salad
  • lemon/lime wedges


  1. Preheat your oven to 400 °F.
  2. In a large mixing bowl add cauliflower, canola oil, cumin powder, BBQ seasoning, coriander powder and salt. Toss to combine and spread cauliflowers evenly on baking sheet.
  3. Roast on botton rack for 20-25 mins or until tender.
  4. While your cauliflower is getting roasted prepare your sauce. In the same mixing bowl add tomoto sauce, chipotle sauce, dijon mustard, vinegar and maple syrup.Combine and taste, season if you need to adjust the taste.
  5. To serve, warm tortillas in the oven and add cauliflower and the sauce on the top. Garnish with lemon/ lime wedges, salad and fresh cilantro.
