Compote are my new obsession after fresh fruit chutneys, I am making seasonal compotes now for a while. I hardly buy any sort of fruit preserve or jams. My homemade compotes are free of any additives; also I am well aware of all the ingredients that I am using for my compote recipes. Using various spices and seeds gives a different texture to the compote and most of the times introduces a health factor. I love using chia seeds in compotes as they help in making compotes thick and obtain jam like texture. I love adding compote to my porridge and this simple compote along with some nuts and seeds makes my oatmeal or breakfast porridge complete. Compotes can be a hearty addition to parfaits or cake toppings. Once you start making compote at home you will stop serving premade fruit spreads; as these are ready within few minutes without any extra efforts. I have used fresh strawberries for my compote recipe, but you also use  any frozen berries of  your choice. Also as fresh plums are in season so I have used prune plums; but any stone fruit can work for this recipe. For sweetness I have added brown sugar and honey, you can use any sweetener of  your choice, for vegan version just replace honey with agave nectar or maple syrup. Ingredients

  • 1 cup strawberries chopped ( fresh/ frozen).
  • 1 cup plums diced (peel on).
  • 2 tablespoon filtered water.
  • 2 tsp brown sugar.
  • 2 tsp honey.
  • 2 tsp chia seeds.
  • 2 tsp shredded coconut.

Instructions

  1. Take a small saucepan and add plums, strawberries, brown sugar and water to it.
  2. Place on medium-high heat.
  3. Once it starts to bubble reduce heat and gently mash fruit with the potato masher or use a wooden spoon.
  4. Continue cooking on low heat for 10-12 minutes; stirring occasionally.
  5. Remove from heat add honey, shredded coconut and chia seeds.
  6. Let it cool for few minutes and then transfer to clean airtight container.
  7. Serve warm, or store in the refrigerator for up to 4 days.
