Oatmeal Peanut Butter Cranberry Cookies

Baking cookies is just not for fall or holiday season; you can bake them all year around. Yes, I know you want to eat something light during summer months; and cookies doesn’t sound appropriate. So here is the option try these oatmeal peanut butter cranberry cookies made with peanut butter and olive oil instead of regular butter.

I made these cookies on a rainy summer day also they got ready in less than 1/2 an hour. So perfect for me as I was having sore throat and spending more time in kitchen was a big “No” for me. So I tried these cookies with ginger tea and it was a kind of bliss. I am sharing this recipe today and you can make them anytime. You can also replace cranberries with dried blueberries or raisins.  I have used olive oil instead of butter and you can also use coconut oil or vegetable oil as a substitute.Oatmeal Peanut Butter Cranberry cookies

Oatmeal Peanut Butter Cranberry Cookies

No Butter Cranberry Cookies
  • ⅓ cup olive oil.
  • 2 tbs creamy peanut butter (natural).
  • 1 cup whole wheat flour.
  • ½ cup brown sugar.
  • 1 tsp vanilla extract.
  • ½ tsp baking soda.
  • 1 medium egg.
  • ½ cup quick oats.
  • ⅓ cup dried cranberries.
  • salt (a pinch)
  1. Preheat your oven to 350º F. Line a cookie sheet with parchment paper and set aside.
  2. In the bowl beat together the oil and peanut butter until smooth.
  3. Add sugar and mix until creamy.
  4. Add the vanilla extract, baking soda, salt and egg and combine.
  5. Add the wheat flour and oatmeal combine gently.
  6. Add the cranberries and fold them into the dough.
  7. Scoop the dough onto the prepared cookie sheet using a medium cookie scoop.
  8. Bake at 350º F for 12-14 mins.
  9. Remove cookies from cookie sheet on to the wire rack to cool.
  10. Store cookies in airtight container.
