I have used raw grated carrots for this recipe because cooking is not necessary every time as it destroys the nutrients. I have added a little lemon zest, sea salt, and cinnamon for boosting the flavor of these carrot fig energy bars. Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup raw walnuts
  • 1 tsp cinnamon powder
  • 1/4 teaspoon sea salt
  • 1 cup dry figs
  • 1 cup grated carrots (about 2 medium/ 1 large carrots)
  • 2 tbsp unsweetened applesauce
  • 1 tbsp virgin coconut oil, melted
  • 1 tbsp flax meal
  • 1 tsp finely grated lemon zest
  • 2 tbsp sunflower seeds

Instructions

  1. Line an 8×8-inch baking pan with parchment paper/wax paper, making sure that there is some paper overhanging the sides of the pan.
  2. Soak figs in boiling water for 5 minutes.
  3. Add walnuts to the food processor and process until finely ground.
  4. Add applesauce, cinnamon, flax meal, coconut oil and sea salt to the food processor and process for 10 seconds, transfer the contents to a bowl.
  5. Remove stems of figs and add them to the food processor, process until smooth.
  6. Combine with walnut mixture, and stir in the grated carrots, lemon zest, and unsweetened coconut (keep 1 tbsp of coconut aside for topping).
  7. Stir well to combine,and transfer the contents to the lined pan. Press the mixture firmly and evenly with a spatula. Sprinkle shredded coconut and sunflower seeds on the top and gently press with the spatula.
  8. Freeze for about 1 hour, remove the bar slab from the pan and cut into desired shapes ( squares, bars or triangles).
  9. Store the bars in the airtight container in the refrigerator.
