We really enjoyed these amazing tacos; my little one liked the stuffing  mixture and I have served the stuffing to him with some chopped lettuce leaves. I have used navy beans for the first time for my  tacos recipe; usually, fish tacos are our first preference. But this time, I want to try something different as we are including more and more plants based foods in our diet. I have also use kidney beans sometimes but I like them better in burritos. This combination of navy beans with veggies was too good that you will try it again and again. You will feel the crunch of vegetables along with spiced navy beans. You can add any of your favourite toppings and can also add some cheese if you are looking for a vegetarian option. But cherry tomatoes and olives makes these wraps a way better. Add your favourite spices to this navy beans stuffing to make it according to your taste. Trust me you will like these vegan taco lettuce wraps as much as you like normal tacos. Serve these taco lettuce wraps as a healthy lunch, dinner or even as a side dish option with your favourite toppings.

Ingredients

  • 2 tsp olive oil
  • 1/2 medium size red onion (chopped).
  • 2 cups cooked/canned navy beans.
  • 1 tsp garlic powder.
  • 1/2 tsp sea salt.
  • 1/2 tsp freshly ground black pepper.
  • 1 tsp ground cumin.
  • 1/2 tsp coriander powder.
  • 1/2 tsp paprika.
  • 1/2 tsp chili powder.
  • 1/4 cup corn kernels.
  • 1/3 cup frozen peas.
  • 1 medium size carrot (grated).
  • Iceberg or Romain lettuce leaves, doubled up, for serving
  • For Garnish: sliced cherry tomatoes, sliced olives, chopped cilantro, salsa/ sauce.

Instructions

  1. Heat olive oil in a non-stick skillet over medium-high heat. Add onion and saute for 2 minutes.
  2. Add frozen peas, corn kernels and cook covered for about 2-3 minutes, stirring occasionally.
  3. Add navy beans, garlic powder and season with salt and pepper; cook for about 2-3 minutes. Add cumin, chilli powder, coriander powder and paprika mix well.
  4. Finally add carrots, stir and cook for about 2 minutes.
  5. Wash and arrange the lettuce leaves and serve mixture over lettuce leaves with the toppings.
