Mango Strawberry Cucumber Salsa

Fresh strawberries and mangoes are my little one’s favorite fruits, he can eat them well if i serve them cubed ; otherwise he stains his face with these super juicy fruits. So it’s always best to serve him cubed strawberries and mangoes and what else can be healthier than mango strawberry cucumber salsa. Fresh snacks are as equally important as healthy balanced meals.
Strawberry Mango SalsaBerry picking is always a fun thing and one of the best activity to do in spring/summer; but over here in Canada strawberry season is way too short which literally starts in summer. So I try to eat strawberries in every possible way; I use this goegeous, juicy, red fruit in many recipes ranging from fruit salads, desserts, drinks or as my breakfast topping. I can make strawberry smoothies or desserts all year around with frozen strawberries “offcourse fresh strawberries are always best” but salsa is something that calls for fresh strawberries. The other key ingredients in this recipe are mangoes and cucumbers. I have added mangoes to make it more juicy and lightly sweet. Mango adds natural sweetness and classic tart flavor to this fresh summer salsa. Mango goes quite well with strawberries too. On the other hand cucumbers adds special crunch and delicate taste and freshness to this amazing fresh fruit salsa. Kids and toddlers can also easily pick and chew these diced cucumber pieces. Ingredients

  • 2 cup strawberries(hulled and diced).
  • 1 mango (pitted and diced).
  • 1/2 english cucumber (diced).
  • 1/3 cup cilantro leaves with tender stems (chopped).
  • 1/3 cup red onion (finely chopped).
  • 1 jalapeno (seeded and finely chopped).
  • Juice of 1 lime.
  • 1/8 tsp salt.
  • 1/8 tsp ground black pepper.

Instructions

  1. In a large bowl whisk together lime juice, salt and pepper.
  2. Add diced strawberries,onion, mango, cucumber, jalapenos and stir together until well combined.
  3. Serve immedietely with tortilla chips or pita chips.

Notes

Serve this salsa immeditely or place diced fruits covered in refrigertor and add lime juice, salt and pepper just before serving.
