Creamy and Delicious Homemade Almond Milk

What is my preferable base for vegan smoothies? Yeah, you might have guessed it right its almond milk. I use only two type of vegan milk mostly and that are either almond milk or coconut milk. But this homemade almond milk is a better option for most of us as we can easily make it at home with dry nuts.

While it’s very easy to use store-bought almond milk, but I try to avoid them as much as I can. Although I buy organic unsweetened almond milk most of the time but that may still contain additives like carrageenan . Which is not very harmful but, as I prefer minimum additives in my diet so homemade almond milk is definitely a good option.

You can easily make it at home as you just need few basic ingredients to make creamy homemade almond milk. The basic things you need for this recipe are:

You can add any sweetener of your choice to your homemade almond milk. You can also adjust the thickness of almond milk. You can keep your almond milk thinner if you want to use it for smoothies or drinking and you can keep it a bit thicker if you want to have almond milk with breakfast cereals. You can also add some natural flavors like vanilla, banana, strawberries, and chocolate to make variants of homemade almond milk.

Ingredients

  • 1 cup raw sprouted organic almonds(soaked overnight in cold water / 2-3 hours in very hot water)
  • 4 cups filtered water ( more for thinner consistency and less for thick almond milk)
  • 1/4 tsp sea salt

Instructions

  1. Soak almonds for at least 8 hours in filtered water with 1/4 tsp of sea salt. (Soaking helps in breaking down the phytic acid and enzyme inhibitors and cultures beneficial enzymes in the almonds. Soaking also make nuts more nutritious and digestible)
  2. Rinse the almond with cold water; add almonds with 4 cups of filtered water to a high-speed blender and blend until creamy and smooth.
  3. Strain mixture through a sprout bag, cheesecloth or kitchen towel. Squeeze until all the liquid is extracted.( Save the pulp and dehydrate it; this can be used to make almond flour or making almond cookies).
  4. Pour the prepared almond milk into glass bottles or a jar;  cover and store in the refrigerator for up to 1 week.
